Pontefract is known for its liquorice. This led to a famous John Betjeman poem. The 18th-century apothecary George Dunhill discovered that his throat lozenges sold more the more sugar was added. This led to the creation of Pontefract Cakes. In the 20th century, Haribo acquired the confectionery business, which thrived. A sweet scent is often present in the town. Local liquorice could not compete with Turkish imports, so the fields were rubbed out in 1960. There have been some attempts to restore them.
